The White Tea is the first flush creation that comes from the foothills of Mt. Kangchenjunga near the habitats of the Red Panda. The tea is prepared using only the top shoots, known as "MUNA". Using Taiwanese methods, the shoots are carefully withered in the sun and shaken in a bamboo drum to balance elements of light, air, and water and left to rest for several hours. This process removes 70% of the moisture from the leaves. The leaves are then fermented for 12 hours until they are ready for roasting. The leaves are then roasted at a temperature of 130 degrees for 22-25 minutes. This enhances the taste, color, aroma, and flavors of White Tea. The production of White Tea doesn't include a fermentation process.
